This Classic Focaccia Is a Test of Italy

Savour Carmel Carmichael's focaccia to be transported to the quaint towns of Italy, where every bite carries the charm of a traditional Italian kitchen.

Ingredients

4 cups all-purpose flour
1 ½ cups warm water
1 packet dry active yeast
1 tsp sugar
1 tsp salt
¼ cup olive oil, plus extra for drizzling
Fresh rosemary sprigs, for garnish
Handful of basil leaves
¼ cup sundried tomatoes, chopped
Coarse salt, for sprinkling

Method

  1. Combine warm water, yeast, and sugar in a small bowl. Let the mixture sit until it becomes frothy.
  2. In a large mixing bowl, combine the flour and salt. Make a well in the centre and pour in the activated yeast mixture along with ¼ cup of olive oil. Mix with a wooden spoon until a dough forms.
  3. Knead the dough on a floured surface until it’s smooth, then transfer it to a greased bowl, cover with plastic wrap, and a kitchen towel and allow it to rise until doubled in size.
  4. Preheat oven to 220°C (425°F).
  5. Once the dough has risen, punch it down and place it in a greased baking pan. Press the dough out evenly to the edges.
  6. With your fingertips, create dimples all over the surface. Drizzle the rest of the olive oil over the top, then add the chopped rosemary, sundried tomatoes, and a sprinkling of coarse sea salt. Allow the dough to rest for an additional 15-20 minutes.
  7. Bake for 20-25 minutes or until the focaccia is golden brown.
