This salad is a beautiful meal on it&#8217;s own or can be a side dish for a roast. Firmer vegetables like beetroot and carrot retain their intense flavour and texture when cooked in the SMEG Combi-Steam Oven.<\/p>\n<p>Prep + Cook Time: 45 Minutes<\/p>\n<p>Serves 4<\/p>\n<p>Salad ingredients:<\/p>\n<ul>\n<li>250g golden baby beetroot, trimmed<\/li>\n<li>250g red baby beetroot, trimmed<\/li>\n<li>400g baby carrots, trimmed<\/li>\n<li>400g baby purple carrots, trimmed<\/li>\n<li>1 large red onion (300g), cut into thick wedges<\/li>\n<li>1 teaspoon Dijon mustard<\/li>\n<li>\u00bc cup loosely packed mint leaves<\/li>\n<li>900g Persian fetta, drained and crumbled<\/li>\n<\/ul>\n<p>Honey dressing:<\/p>\n<ul>\n<li>\u00a0\u00bc cup (60ml) olive oil<\/li>\n<li>1 \u00bd tablespoons red wine vinegar<\/li>\n<li>2 teaspoons honey<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<ol>\n<li>Set SMEG Combi-Steam Oven to steam+static+fan+ function. Preheat to 220\u00b0C with 20% steam. Line a large oven tray with baking paper.<\/li>\n<li>Make honey dressing: whisk ingredients together in a small bowl; season to taste.<\/li>\n<li>Scrub beetroot and carrot. Halve any large ones. Place on prepared tray with onion. Spoon half the dressing over the vegetables; toss to coat. Season. Roast for 30 minutes or until vegetables are tender.<\/li>\n<li>Stir mustard into remaining dressing.<\/li>\n<li>Arrange vegetables on a platter; top with mint and fetta.
